Three top chefs from Barcelona are offering up signature dishes using Icelandic salt cod at Tapas Barinn’s Saltfiskhátið, or Salt Cod Festival, mbl.is reports. Chefs Guillem Rofes, Jordi Asensio and Francisco Diago Curto won first, second, and third place at Promote Iceland’s Islandia al Plat competition in their home city, and have now been invited to share their winning dishes in Reykjavík.
The competition was intended to promote Icelandic salt cod (bacalao) abroad, but it’s hoped that the chef’s take on this classic Icelandic ingredient will bring something new to local palates as well. “We invited them to Iceland to introduce their recipes to Icelanders,” explained Kristinn Björnsson, the project manager at Promote Iceland.
The three signature dishes—Catalan-style salt cod with spinach and garlic, salt cod with pil-pil sauce, and confit salt sod with mushrooms, apples, and chili—will be served alongside the restaurant’s own salt cod-centric menu.
Tapas Barinn’s Salt Fish Festival will continue through February 28.
